In Mexico, I married Polina.
This is the one stop that wasn't about a kitchen at all. On May 15th, on the beach in Sayulita, I married Polina.
For years we met in the in-between places, because she couldn't get a visa to the States. A month in Cuba. Two months in the Philippines. Two months in Thailand. All those little lives we built a month at a time, always with a plane ticket out. Sayulita is where all of it finally turned into one life. On the sand, barefoot, the whole thing.
She's been the quiet engine of this entire journey. Every yes I chased, every kitchen I talked my way into, every long travel day, she was right there making it work. Marrying her in the middle of the tour felt exactly right.
We stayed a while after. Sayulita is a small surf town on the Pacific with some genuinely great food, and I found one spot I'd send anyone to. That clip's below.
